Favorite Rum Cake Recipe
Happy Holidays! Just a quick post of one of my favorite recipes this time of year! Eat responsibly and don’t eat and drive!
Favorite Rum Cake
½ cup chopped pecans or walnuts
1 yellow cake mix with pudding in the mix (not butter recipe)
½ cup golden rum
½ cup oil
2 small packages instant vanilla pudding
½ cup water
4 eggs
Grease & flour bundt pan. Sprinkle nuts on bottom of pan. Combine cake mix, pudding, rum, water, oil & eggs then beat 2-4 minutes on medium speed. Pour into pan & bake @ 325* for 50-60 min. Remove from oven and let stand for 20 min then turn out of pan. Mix glaze and pour slowly over the cake and allow it to set overnight to absorb the glaze.
Glaze
1 cup sugar
¼ cup golden rum
½ cup margarine or butter (not vegetable spread)
¼ cup water
Combine ingredients & boil 2-3 minutes before pouring over cake.
